🍲 Recipe Corner: Sheet Pan Salmon & Veggies

Here’s a healthy meal prep recipe you can throw on a pan to bake. Simplify by seasoning everything with just salt, pepper, and olive oil. Change up the protein by substituting chicken, shrimp, beef, or tofu!

Prep Time: 10 minutes
Cook Time: 1 hour

Ingredients

For the Salmon:

  • 1/3 cup soy sauce

  • 1 tbsp rice vinegar (or tamari/liquid aminos)

  • 1/4 cup honey (or brown/white sugar)

  • 16 oz salmon (cut into 3 pieces)

For the Sweet Potato:

  • 1 large sweet potato (chopped into bite-sized pieces)

  • 1 tsp cumin

  • 1 tsp cinnamon

  • 1 tbsp olive oil

  • Salt and pepper to taste

For the Broccoli:

  • 1 large head of broccoli (chopped)

  • 1 inch ginger (minced)

  • 3 cloves garlic (minced)

  • 1 tbsp soy sauce

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C).

  2. Prepare Salmon: Mix soy sauce, rice vinegar, and honey in a bowl. Place salmon in a baking dish, sprinkle with salt, and pour sauce over it. Let it sit.

  3. Roast Potatoes: Toss sweet potato pieces with olive oil, cumin, cinnamon, salt, and pepper. Spread on a sheet pan and bake for 20 minutes. Flip and bake for another 15-20 minutes.

  4. Prepare Broccoli: In the same bowl used for the potatoes, mix broccoli, ginger, garlic, salt, pepper, and olive oil. Spread on another sheet pan.

  5. Add Salmon: Place salmon pieces next to the broccoli. Spoon more sauce over the salmon.

  6. Bake: Bake salmon and broccoli for 15 minutes, or until salmon is firm and flakes easily.

  7. Serve: Divide salmon, broccoli, and sweet potatoes between 3 meal prep containers.
